Chicken Burrito Bowl

Recipe from Womans Day, May 2019


Veggies:
Heat 2 t. oil in large skillet. Add 1/2 small red onion (sliced) and 1/2 red pepper, 1/2 t groun cumin, 1/4 t. salt and pinch of cayenne pepper and saute, stirring until tender.

Rice:
Cook rice you are desire. Healthier with brown rice.

Chicken:
4 oz shredded chicken breast

Cilantro Lime Dressing:
1/4 cup 2% plain Greek yogurt
2 T. finely chopped cilantro
2 t. fresh lime juice
pinch salt and pepper

Combine all. Top with dressing and serve.
