Oatmeal Scotchies




These were always a favorite in my husband's childhood home.
This recipe is from the back of the Nestle Tollhouse Butterscotch Chip Bag.

Ingredients:
1 1/4 cups flour
1 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. salt
1 cup butter (2 sticks)
3/4 cup sugar
3/4 cup brown sugar
2 large eggs
1 tsp. vanilla extract
3 cups rolled oats
1 2/3 cups butterscotch chips

Instructions:
Preheat oven to 375 degrees.
Combine flour, baking soda, eggs and vanilla in a large mixing bowl.
Beat butter, sugars, eggs and vanilla in large mixing bowl.
Gradually beat in flour mixture.
Stir in oats and chips.
Drop by rounded tablespoon onto ungreased baking sheets.
Bake for 7-8 minutes for cookies that are chewy or 9-10 minutes for cookies that are crisp.
Cool on baking sheets for 2 minutes.

Nana's "Good Morning" French Toast

Ryan's mom left this recipe for him in the kitchen of his Chicago summer apartment back in 1999. Ryan and I always use this for our french toast recipe.

Ingredients:
2 eggs
1 cup whole milk
1 T. vanilla
1/3 cup sugar

Instructions:
Dip bread in mixture and cook in fry pan until golden brown.

Texas Cadillac Salsa


I got this recipe from June. It's a winner every time! Beware...it makes a HUGE batch!
Ingredients:
1 red pepper (core and clean and dice real thin)
1 green pepper (core and clean and dice real thin)
1 orange pepper (core and clean and dice real thin)
1 red onion, diced
bunch of cilantro
1 can white corn
1 can black beans (drain and rinse)
1 can red kidney beans (drain and rinse)
Mix all veggies and beans in a bowl.

Mix the following items and bring to slight boil:
1/2 cup cider vineger
1/2 cup sugar
1/4 cup canola oil

Pour over veggie and bean mixture.
Put in fridge for 6-24 hours.
Serve with Tostito Lime Chips.

Nana's Banana Bread

Ingredients:
2 cups sifted all purpose flour
1 t. baking soda
1/2 t. salt
1/2 cup softened butter
1 cup sugar
2 eggs
2 medium over-ripe bananas (mashed)
1/3 cup milk
1 t. vinegar
1/2 cup chopped walnuts (optional

Instructions:
This takes 1 large mixing bowl, 1 smaller bowl, and 1 measuring cup
In a large mixing bowl combine softened butter and gradually cream in sugar, then add eggs. Blend well, then add mashed bananas.

In another small bowl combine flour, baking soda, and salt. Set aside.

In a measuring cup combine milk and vinegar, gently stir liquids. /set aside.

Using the large mixing bowl as the main mixing bowl gradually add the dry and wet ingredients alternatly beginning and ending with dry ingredients. Mix well between each addition.
Stir in nuts if desired. Pour into greased loaf pan.

Bake at 350 for about 60 minutes. The top should look done and have a crack. Remove from pan and let cool on a rack.

Helpful tips:
This loaf freezes well. You may want to insert a wooden skewer to see if it comes out clean. There is a little bit of a trick in timing the loaf so the center is not raw and yet the edges are not overcooked. We love to slice up the loaf and wrap each thick slice individually in waxed paper to have as a snack on car trips. Enjoy!

Nana's Apple Pie

Start with:
2 premade unbaked pie crusts
4 different types of apples peeled and sliced = 16 apples total (4 granny smith, 4 golden delicious)

Mix togther:
1/2 cup sugar
1/2 cup brown sugar
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/8 teaspoon clove
1/4 cup flour

Dip Raw Apples into mixture. May need to add more cinnamon. If it tastes ok mix with all the spples. Once mixed add 1/8-1/4 cup dark molassas and put into pie crust.


Crumble Topping:
1 cup oatmeal
1/2 cup brown sugar
1 stick butter cut into cubes

Mix up and put over the top of pie and push down. After adding topping drizzle dark molasses on top in criss cross pattern.
