Nana's Banana Bread

Ingredients:
2 cups sifted all purpose flour
1 t. baking soda
1/2 t. salt
1/2 cup softened butter
1 cup sugar
2 eggs
2 medium over-ripe bananas (mashed)
1/3 cup milk
1 t. vinegar
1/2 cup chopped walnuts (optional

Instructions:
This takes 1 large mixing bowl, 1 smaller bowl, and 1 measuring cup
In a large mixing bowl combine softened butter and gradually cream in sugar, then add eggs. Blend well, then add mashed bananas.

In another small bowl combine flour, baking soda, and salt. Set aside.

In a measuring cup combine milk and vinegar, gently stir liquids. /set aside.

Using the large mixing bowl as the main mixing bowl gradually add the dry and wet ingredients alternatly beginning and ending with dry ingredients. Mix well between each addition.
Stir in nuts if desired. Pour into greased loaf pan.

Bake at 350 for about 60 minutes. The top should look done and have a crack. Remove from pan and let cool on a rack.

Helpful tips:
This loaf freezes well. You may want to insert a wooden skewer to see if it comes out clean. There is a little bit of a trick in timing the loaf so the center is not raw and yet the edges are not overcooked. We love to slice up the loaf and wrap each thick slice individually in waxed paper to have as a snack on car trips. Enjoy!
